I have been having problems with my computer and am not able to upload any pictures. I hope that you are able to stop for a moment and enjoy the true spirit of Christmas. The blessings of friends and family to share in the joy of the season. I have always loved to watch the joy of others opening their gifts it gives me more pleasure than opening my own gifts. My father always said that,"The beauty of Christmas is in the joy of the children". His greatest pleasure was having all of his family together for the holidays. My father would always thank us for sharing that time together. I find Christmas to be bittersweet now, this is the third one without him. We place flowers at his spot at the the table to honour him. Family is one of the greatest blessings a pure treasure. Merry Christmas to everyone.


I have a great recipe for thimble cookies you can very them wth different coatings chopped pecans, walnuts ,coconut etc,and fillings jams ,caramel etc.


THIMBLE COOKIES

1/2 CUP BUTTER

1/4 CUP BROWN SUGAR

1 EGG YOLK

1 CUP FLOUR

1 EGG WHITE

3/4 CUP NUTS(pecans,walnuts,or coconut)

1/2 CUP JAM( caramel)

1 TEASPOON VANILLA


Preheat oven to 350

Cream butter add sugar and beat until fluffy. Add egg yolk and beat well,add vanilla and beat in.addflour and stir until combined.

Roll mixture into balls ,dip in egg white then roll in nuts.

Place on a greased cookie sheet. Make a dint in the center of each cookie

(I use the end of a wooden spoon.) Bake for 5 minutes remove and redint cookies bake for 5-10 minutes fill with jam or caramel. whil still warm.
